Stuffed peppers with feta

Serves 2


  • 2 bell peppers
  • Merchantgourmet quinoa poach or similar pre prepared grains
  • Bolognese (homemade is best)
  • Jar roasted peppers (optional)
  • Peas
  • Creme fresh
  • Feta cheese


  • Turn the grill on low (or a grill oven to about 180oC if you have one)
  • In a bowl mix a poach of grains with a single serving of Bolognese, 1 large roasted pepper (or 2 smaller ones) sliced & a handful of frozen peas
  • Mix and add a table spoon of creme fresh
  • Carefully chop your two bell peppers lengthways, so the stem is sliced in half
  • Remove the seeds and any white pith
  • Using a spoon stuff your peppers evenly with the mix
  • Place under a low grill for 15/20 minutes
  • Remove and sprinkle over 1/4 of a packet of feta
  • Return under the grill to brown the cheese on top until a little golden
  • Serve on some (washed) lightly dressed rocket – 2 half’s per person is a perfect portion in my opinion
