
(Serves 3/4)
Ingredients
Meatballs –
- Pork sausages (6)
- Dried chillis (2) or chilli flakes
- Chilli powder
- 1 clove chopped garlic
Sauce
- Small white onion
- Tomatoes – around 4 big / 15 small
- *Optional* Fresh soft herbs (a large handful)
+ spaghetti (around 100g per person)
Method
- Place some water in a pan for the spaghetti and bring the the boil
- If using dried chillis in a pestle and mortar grind the chillis to crush them
- Wet hands
- Cut the sausages down the middle to remover the meat from the skins
- Place in a bowl and add the chilli and garlic
- Using your hands divide the mix into small mouth size portions, roll between your palms to make balls
- Heat a splash of oil in a frying pan
- Place the sausage balls in the pan one at a time
- Leave for 2 mins until they start to form a crust on one side
- At this point put your spaghetti in to cook
- Turn your meatballs onto the other side
- Put a lid on the pan and turn the heat down a little, leave to cook through for 5/8 minutes dependant on size
- In a good mixer blend the onions, add the tomatoes and blend again
- Add any herbs (if you wish) and blitz again for a few seconds
- Transfer this mix to a pan, cook out for 2 minutes
- Add the drained, cooked spaghetti + a splash of the pasta water
- Once cooked through (cut one in half to check) add the meatballs to your saucy spaghetti mix
- Stir gently
- Add a final glug of olive oil
- Season to taste + serve
