Sausage and potato tray bake and lemony kale

Serves 2/3

Ingredients

  • 1 onion, chopped
  • 3 cloves of garlic
  • 300g small or new potatoes
  • 6 sausages
  • 1/2 bag of kale, washed
  • 1 mug of peas
  • 1/2 lemon
  • Olive oil
  • Balsamic Glaze

Method

  • Turn oven onto 180oC
  • Chop onion into medium fine chunks
  • Using an oven proof dish add the onions and a drizzle of oil & pop straight into the oven with a lid on
  • Chop the potatoes into small (2cm ish) pieces
  • After 10 minutes add the potatoes to the onions, stir to coat all in the oil and return to the oven
  • Bake for 20 minutes
  • Remove from the oven and take off lid
  • Add the sausages on top of the potatoes, return to the oven without the lid this time
  • Turn oven up to 200oC
  • Cool sausages according to instructions, turning 1/2 way to ensure even browning
  • Wash kale and peas under hot water
  • Once sausages are cooked remove from the oven, turn oven off, take sausages out and place on plate while you add the kale and peas to the potato/onion mix
  • Stir + add the zest of half a lemon
  • Place the sausages back on top, put the lid on the pan and return to the oven for 5 minutes (the residual heat will be enough to cook the veg through
  • Remove from the oven again, finally squeeze over the lemon juice, add a drizzle of balsamic glaze and an extra drizzle of olive oil and then serve

(Make sure you scrap any potato onion mix off the bottom of the pan…it’s the best bit!)
