Pork Chop with Pesto Veg and Beans

Ingredients 

  • 2 pork chops 
  • Honey
  • 1 onion
  • 1 clove garlic
  • 1 pepper
  • 1/2 courgette
  • 10 (ish) cherry tomatoes 
  • 1/2 jar roasted veg pesto (I used one from @filipoberrio_uk)
  • 1 small glass white wine
  • Tomato purée, 1 tbsp

Method

  • Turn oven on to 200oC
  • Slice onions 
  • In a saucepan soften the onions with a little oil
  • Chop the remainder of the veg 
  • Once the onions are soft add the other veg and cook for 5 minutes
  • Add the pesto and wine. Stir, bring to a simmer
  • Add the tomato purée, stir and then turn off
  • Transfer to a oven dish (ideally one where it can be spread about 1 inch thick)
  • Brush both sides of the pork chops with a little honey
  • Place the pork chop on top of the veg mix and place in the oven
  • Cook the chop on one side for 10 minutes, take out and turn the chop over. 
  • Return the dish to the oven for another 10 minutes
  • Remove from the oven, let rest for 5 minutes
  • Serve up with some freshly chopped basil on top
