Fish Finger Tortilla Tacos

This ones more of an assembly job and you can definitely adapt the recipe to make it with stuff you like the most but…⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • Fish fingers (4 each)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Mayo, 4 dollops⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Paprika⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Lemon⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Rocket⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Red pepper, 1/2 sliced thinly ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Pink pickles (see @ellypears highlights for these)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Tortilla wraps, mini ones (2 each)⠀⠀⠀⠀⠀⠀⠀⠀⠀

Method⠀⠀⠀⠀⠀⠀⠀⠀⠀

Nb/ Pink onions need to be made in advance⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • Pop you fish fingers under the grill and cook according to manufacturers instructions until done (I like mine crispy)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Meanwhile in a bowl add the mayo, seasoning and a 1/4 of a teaspoon of paprika together and mix⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Slice your pepper and sprinkle some rocket with a little lemon juice⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Once the fish fingers are 2 mins from done open the oven and using an empty oven rack bend your tortillas through the bars to form mini upside down V shapes. Leave in the oven for 2 mins then turn off⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Remove the tortillas, which should have formed a basket for all your ingredients and firmed up a little⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Pile all the ingredients in; the salad, fish fingers, mayo and top with the pink onions⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Eat straight away and try to resist turning the oven on again to make more!
