- (For 2 decent size puddings)⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 75g mini marshmallows⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 25g soft butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 125g dark chocolate, chopped into small pieces⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 30ml hot water⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 142ml double cream⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 tsp vanilla extract⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Put the marshmallows, butter, chocolate and water in a heavy-based saucepan and heat gently while stirring until combined and melted. Then remove from the heat.⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Whip the cream with the vanilla extract until thick, and then fold into the cooling chocolate mixture until you have a smooth mixture.⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Pour into 2 glasses and chill until you want to eat… best served IMO with some raspberry’s to cut through the sweetness and a shortbread to scrap any leftovers with!
