
Makes 4 cakes
Ingredients:
- Butter/oil for cooking
- 4 large potatoes (peeled/boiled/mashed & cooled if they aren’t already at this stage)
- 1 egg
- 20g hard cheese, strong cheddars my fave
- 1 clove crushed garlic
- A small handful of soft herbs (chopped)
- Seasoning
- 2 tablespoons of plain flour
Method
- In a frying pan heat a small nob of butter in a splash of oil
- As this warms in a pan mix all of the above ingredients
- Using your hands form into even sized balls
- Then place each ball in the pan, pushing down a little to flatten
- Leave, let it sit in the pan for 3 minutes cooking without moving to allow a crust to form and ensure your cake doesn’t fall apart
- Flip and cook for the same time on the other side
- Remove from the pan and serve straight away with a salad or some avocado for a delicious feel good meal
