Easy Cheesy Potato Cakes

Makes 4 cakes


  • Butter/oil for cooking
  • 4 large potatoes (peeled/boiled/mashed & cooled if they aren’t already at this stage)
  • 1 egg
  • 20g hard cheese, strong cheddars my fave
  • 1 clove crushed garlic
  • A small handful of soft herbs (chopped)
  • Seasoning
  • 2 tablespoons of plain flour


  • In a frying pan heat a small nob of butter in a splash of oil
  • As this warms in a pan mix all of the above ingredients
  • Using your hands form into even sized balls
  • Then place each ball in the pan, pushing down a little to flatten
  • Leave, let it sit in the pan for 3 minutes cooking without moving to allow a crust to form and ensure your cake doesn’t fall apart
  • Flip and cook for the same time on the other side
  • Remove from the pan and serve straight away with a salad or some avocado for a delicious feel good meal
