Coca-Cola Gammon⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients⠀⠀⠀⠀⠀⠀⠀⠀⠀

For the gammon⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 small gammon joint (unsmoked)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 onions⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 cans of Coca-Cola⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • ½ tbsp peppercorns⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 bay leaf⠀⠀⠀⠀⠀⠀⠀⠀⠀

For the glaze ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 75ml maple syrup⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tbsp wholegrain mustard⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tbsp red wine vinegar⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • pinch of ground cloves or five-spice⠀⠀⠀⠀⠀⠀⠀⠀⠀

Method⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • Put the unsmoked boneless gammon joint in a pan which allows it to sit with some space around the sides and on top and pour the cola on top of it.
  • Chop and add the onions, peppercorns and bay leaf.⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Bring to the boil, then turn down to simmer for around 2 ½ hrs, topping up with boiling water if necessary to keep the gammon fully covered.⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Carefully pour the liquid away, keeping the boiled onions⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Place these is a roasting tin and place the ham on top⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Score the fat and skin all over lightly⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Mix all of the glaze ingredients together and brush half over the ham⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Roast for 15 mins, then pour over the rest and return to the oven for another 15 mins, turning over half way through
  • Remove from the oven and allow to rest for 10 mins (if you can resist picking at it), then spoon any glaze from the tray over the top before serving more glaze over the top.⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Eat with mash/roasties/salad…whatever you like and then have it again cold the next day! Yum!
